Chicken Fried Rice with Vegetables

Ingredients:
1 piece chicken breast
1 red pepper, chopped
1 carrot, chopped
1 green onion, chopped
2 cups cooked rice
olive oil
soy sauce
chopped garlic, salt and pepper to taste

Brown chicken in skillet with garlic, salt, pepper and oil. Add chopped carrot and rice. Stir-fry and cover. Add red peppers and soy sauce. Stir-fry and eat.

400 calories, 5 grams fat, 19 grams protein
